What should one do when you find yourself slipping while doing Adho muka svanasana even with good mat grip?

You can try to grip the outer edges of the mat and pull them away as you stretch back.

This will give you something to grip and not slip.

This will also give an outer rotation of the upper arms and more opening in the shoulders.

Some students put a towel under their hands to reduce slipping.

If your mat is new or perhaps it is old, but washing it in the washing machine with a small amount of washing soap can help to reduce the slipperiness of the mat.
